Lettuce Wrap Chicken


If you haven't notice chicken nuggets are my weakness.

10oz boneless chicken thighs with skin, cut into bite size
3Tbsp Potato or Corn starch
2Tbsp All purpose flour
Oil for deep frying

For the Marinade
1Tbsp Soy Sauce
1/2 Tbsp Mirin
1/2 Tsp Garlic, crushed

For Serving
Fresh chives, mint, cilantro to taste
Lettuce to wrap the chicken
Sweet Chili sauce for dipping

1. Place the chicken in the marinade and leave it for 30mins or over night.

Heat the oil 340 degrees for frying.
3.
Dust the nuggets generously with the flour and corn starch mixed
4. When the oil is hot enough, deep fry the nuggets for 4-5 mins or until it is golden brown and crispy. Drain the nuggets on the paper towel.
5. Served the nuggets with lettuce, herbs of your choice, and with dipping sauce if you like.
