
My Mum brought 3 dozen chicken legs because there was a sale... Yea, I'm going to be doing a lot of cooking with chicken legs.
(This recipe is for the whole chicken, if you want to just cook legs then adjust the cooking time.)
3 lb Chicken
1 inch cube of ginger, sliced
For Marinade
2 bottles Lee Kum Kee Drunken Chicken Marinade
1/4 cup Chinese Rice Wine
1/4 cup Sake
Cilantro, optional
1. In a large pot, bring the water with ginger to a rolling boil.
2. Reduce the heat to a simmer, slowly add the chicken.
3. Cover it with a lid and turn to low heat, then let it cook for about 30mins.
4. Turn off the fire, and take the chicken out to give it a ice bath.
(This will make the chicken juicy with a jelly like skin)
5. Put the chicken in the marinade overnight
6. Serve with cilantro
